Recipe: Sweet Potato Fries

I’ve been craving sweet potatoes lately, so I made a mad dash to the Farmers Market and stocked up. I also bought a mandoline for the occasion. I feel all grown up with my high tech tools!

I’ll admit, the first batch, not so great, it was a sad day. They almost looked like Halloween cookies since they were orange & black.

However, the second time was a charm & I got these beautiful crispy golden sweet fries. I cut mine steak fry style, of course you could julienne them too. They’re a perfect snack with less guilt, I hope you enjoy!

Sweet Potato Fries

Ingredients

  • 1 large sweet potato
  • 1 tbsp olive oil
  • 1 tbsp cinnamon
  • 1 tsp sugar

Cooking Directions

  1. Preheat oven to 400 degrees
  2. Peel potato, with a mandoline, slice potato into 1/8 inch disks
  3. Put potatoes in bowl, toss with oil, cinnamon, and sugar
  4. Place in one layer on baking sheet
  5. Bake for ten minutes and flip slices over.
  6. Bake for 5-10 minutes, until edges are crispy and centers are tender
  7. Let cool for 5 minutes & serve
