I’ve been craving sweet potatoes lately, so I made a mad dash to the Farmers Market and stocked up. I also bought a mandoline for the occasion. I feel all grown up with my high tech tools!
I’ll admit, the first batch, not so great, it was a sad day. They almost looked like Halloween cookies since they were orange & black.
However, the second time was a charm & I got these beautiful crispy golden sweet fries. I cut mine steak fry style, of course you could julienne them too. They’re a perfect snack with less guilt, I hope you enjoy!
Sweet Potato Fries
Ingredients
- 1 large sweet potato
- 1 tbsp olive oil
- 1 tbsp cinnamon
- 1 tsp sugar
Cooking Directions
- Preheat oven to 400 degrees
- Peel potato, with a mandoline, slice potato into 1/8 inch disks
- Put potatoes in bowl, toss with oil, cinnamon, and sugar
- Place in one layer on baking sheet
- Bake for ten minutes and flip slices over.
- Bake for 5-10 minutes, until edges are crispy and centers are tender
- Let cool for 5 minutes & serve
