Recipe: Chicken & Orzo Frittata

I love breakfast for dinner. It’s great for a lazy Sunday or a busy work day. While skimming through one of Giada De Laurentiis’ cookbooks, I came across a recipe for her Chicken & Orzo Frittata. So simple & also great for using up your leftover chicken.

It came out golden and oh so beautiful, I almost didn’t want to cut it up!

However, when I finally got the nerve to cut into it, hot cheese just oozed on out. Beautiful. The taste was also very light too.

If anything, this has gotten me inspired to make my own frittatas. I like this version because you just put it in the oven & let it do its job. You don’t have to constantly watch it. What are your favorite breakfast recipes?
