Recipe: Huevos Rancheros

Ever had breakfast for dinner?

I don’t know about you but nothing is easier than whipping up some eggs and other breakfast fare when you’re just plain tired after a long day.

So I adapted this Huevos Rancheros recipe from SimplyRecipes.com. I went low carb by omitting the corn tortillas.

I started up by chopping two large tomatoes and combining them with enchilada sauce.

In another pan I made my own refried beans by mashing up some pinto beans.

In the end I got this sweet and slightly spicy tomato sauce doused over a warm over easy egg and refried beans. The combo of these three textures and flavors was very comforting. It’ll definitely be in my list of recipes to make for a busy day!

Huevos Rancheros

Ingredients

  • 8 oz enchilada sauce
  • 2 large tomatoes, chopped
  • 2 eggs, over easy
  • 16 oz can pinto beans, drained

Cooking Directions

  1. Heat a skillet over medium heat.
  2. Add enchilada sauce and chopped tomatoes. Bring to a simmer & then set to low heat.
  3. Meanwhile, heat a second skillet over medium heat, add pinto beans & mash with a mallet.
  4. Heat through & divide between 2 plates
  5. Heat another skillet over medium heat. Spritz some non stick spray & fry eggs to your liking.
  6. To assemble, divide beans between two plates, put an egg on each plate, then top with tomato sauce.
  7. Serve.

      Oh I love the addition of pinto beans, very unique, and delicous! Huevos Rancheros was one of my favorite dishes in Tucson. There was a place we loved going, one of those dives, that just rock! Best Huevos Rancheros in town, my opinion of course, LOL! Hugs, Terra
