Recipe: Chicken Quesadillas

Alright, if you’ve been following this blog for a while, you know that the recipes I post are either from cook books or hand me downs. I’ve made up a few recipes but they’ve been simple: pastas, sandwiches, beverages, sides. Never have I tried to make an entree on my own until today. This was the first time I used a recipe as a guideline instead of following it step by step.

So I made chicken quesadillas. Still relatively simple, yes. But you need to start somewhere. Yes, I used the easy marinade & cook method, but I’m really proud of how it tasted. The smoky cumin cut right through the tart lime. The garlic also added a nice kick to the dish. Couple that with the warm chicken & melted cheese & it’s a winner in my book. I hope you’ll like it too.

Chicken Quesadillas
I adapted this recipe from Mangoes & Chutney
Ingredients
  • 1 lb chicken breast, cut into cubes
  • 1 tbsp cumin
  • 1/2 cup lime juice
  • 1 cup fresh cilantro, chopped
  • 4 garlic cloves, minced
  • 2 tbsp olive oil
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup chopped tomatoes
  • 4 medium sized tortillas
Instructions
Mix the cumin, lime juice, cilantro, and garlic cloves in a small bowl. Pour into zip top bag.Add chicken, zip & turn to coat. Marinate at room temperature for 1 hour.Preheat panini press/ sandwich maker Heat a medium skillet over medium heat. Add chicken and cook until no longer pink, about four minutes.Place chicken, tomatoes, and cheese on half of a tortilla & fold over. Repeat with remaining chicken, tomatoes, cheese & tortillas.Place on panini press and press down for one minuteCut quesadilla into triangles. Serve with salsa

    1. You were adventurous! I either throw a tortilla in a pan and top it with cheese and another tortilla or use the microwave which is the fastest for the kidos!
