Recipe: Chicken Adobo

We’ve been talking about comfort foods lately with the change of season. For me, the granddaddy of them all is Chicken Adobo, a dish I’ve had for as long as I can remember.

It really doesn’t get easier than throwing all the ingredients in a pot, letting it marinate. Then simmering it for an hour, allowing all the aroma from the vinegar, soy sauce, and bay leaf fill the kitchen. The smell alone is comforting.

In the end, you get some crisp & fall off the bone tender chicken. The melding of the salty soy sauce & sour vinegar tastes very rustic. You can also use pork for your adobo if you like. It’s best served over warm rice. Simple & comforting, as it should be. This is my mom’s recipe she typed up for us years ago. I’m glad I kept it with me & happy to share it with you.  What are your favorite comfort dishes?

Chicken Adobo
Ingredients
  • 1 1/2 lb pork shoulder or chicken pieces cut into cubes
  • 1/3 cup white wine vinegar
  • 2 tbsp soy sauce
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1/4 tsp pepper
  • 1/2 cup water
  • 2 tbsp cooking oil
Instructions
Combine all ingredients except cooking oil in a pot & marinate for at least 30 minsSimmer covered for 1 hour or until meat is tenderHeat cooking oil in a pan, brown meat on all sides, transfer to serving dishPour off remaining oil from pan. Add reserved sauce and cook for a minute or two. Pour sauce over meat & serve

        Thanks! Yeah it’s really super easy. Just make sure to keep it on a low simmer, you don’t want the liquid to evaporate, but yes very easy.
