You’ll be proud of me. I actually followed directions this week and stuck with the original recipe. The only thing I changed was the addition of pomegranates. It all started when I went to the Farmers Market. Pomegranates were abundantly available and I decided to pick one up on a whim to make in a recipe. What better way to start then with these Muffin Monday olive oil muffins. I must admit, I never heard of these muffins, but when I saw the original recipe was by Giada De Laurentiis, my favorite chef, I knew it had to taste good.
The muffins turned out wonderfully. The sweet orange contrasted the sour lemon and the pomegranates added a nice sharp bite. The aroma of the buttery olive oil and the sweet balsamic vinegar filled the air as it was baking. My husband liked these so much that he went back for seconds, thirds, and then fourths! At one point he exclaimed “It tastes like Christmas in my mouth” I’ll definitely have to make more.
This recipe reminded me of the girls I met at their store, Oliovera. It was there that I got introduced to the many flavored olive oils & balsamic vinegar. While the shop may not be in Hermosa, they are still running their business online. I’d like to dedicate this recipe to them.

- 1 3/4 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup sugar
- 4 large eggs
- 2 tsp orange zest
- 2 tsp lemon zest
- 2 tbsp balsamic vinegar
- 2 tbsp whole milk
- 3/4 cup extra virgin olive oil
- 1/2 cup pomegranate seeds
- for sifting powdered sugar
In a medium bowl, blend together the flour, baking powder, and salt.Using an electric mixer set to high, beat the sugar, eggs, and zests in a large bowl until pale and fluffy, about 3 minutes. Beat in the vinegar and milk. Gradually beat in the oil. Add the flour mixture and stir just until blended. Fold in the pomegranate seedsFill the muffin tin almost to the top of the paper liners. Bake until golden on top and a tester inserted into the center of the cake comes out with moist crumbs attached, about 20 to 25 minutes. Transfer to a wire rack and cool for 10 minutes. Remove the muffins onto a platter and let cool for 5 more minutes. Sift powdered sugar over the muffins and serve.

Thank you for stopping by! The muffins turned out better than what I expected. Reading that I needed to put olive oil & vinegar in a muffin seemed so odd but it was delish. I’ve participated in a few of these Muffin Mondays & so far this was the one my husband & I will devour before the weekend is over. Lucky for us, we got a spare day!

Oh most definitely for Christmas! This is the first batch of muffins we finished completely. He didn’t have the chance to take the leftovers to work!
I also love Giada and knew these would be wonderful when I saw they were her recipe. I love the idea of adding pomegranate seeds. I can’t wait to try that next time!
