Easter is fast approaching. I haven’t been a fan of eating Peeps because they look too darn cute! So here’s a recipe for those of you out there who are marshmallows but refuse to eat those cute Easter peeps as well. :)
Watergate Salad
Ingredients
1 20 oz can crushed pineapple
1 box instant pistachio pudding
1 9oz carton cool whip
1 cup miniature marshmallows
1/2 cup chopped pecans (optional)
Drain pineapple juice, set aside. Place pudding mix in large bowl and add 4 Tbs of pineapple juice to to make a soft paste. Pudding mix will turn green, mix well. Add drained pineapple, whipped topping, nuts, and marshmallows. Mix well. Mixture will be green and fluffy & will increase in volume.
Refrigerate until well chilled.
Serves 8
