Friday was the first Friday of Lent meaning that I couldn’t eat meat. I’m one that’d get tired of pasta and salad rather quickly so I thought of something else tasty to eat. I came up with a Greek inspired pizza. It’s super simple to make for lunch or dinner. At the beginning of the year, I told myself that I’d create a meal or two on my own without the aid of a cookbook… this pizza was just the start.
Ingredients
1 can pillsbury pizza dough
1 small tub hummus
1 small jar kalamata olives
4 oz feta cheese crumbles
Preheat oven to 425 degrees.
Unroll pizza dough on a cooking spray coated pizza tray or baking sheet, push dough to ends of the pan and indent to create a crust.
Spread a few spoonfuls of hummus onto the dough for the sauce. Use the bottom side of the spoon to spread.
Slice 20 (or more) kalamata olives to small rings and spread over hummus.
Crumble the feta cheese and sprinkle over the olives and hummus.
Bake in a 425 degree oven 9 – 13 minutes, until crust is golden brown.

Greek Inspired Pizza

Your pizza looks delish, but at first I thought those were chocolate chips and not olives on it! LOL! Hey, I’d still eat it… ;)
Thanks Jessica! Also, cheese & chocolate or olives & cheese, it all works right? :-)
Looks simple but something different I suppose.
It was very simple! Most of the recipes I post here are for the beginner cook.
oooohhh pillsbury pizza dough. haven’t tried that yet. i use to use boballi (sp?) and that was aight. the discipline is in making the food…cuz going out and picking something up is real easy.
You’re right….it’s all about the discipline of making the food yourself. I just find it fun & very rewarding!
Feta and olive are two of the best ingredients, those Greeks were on to something. I like your thinking, I should really try to come up with more recipes on my own rather than relying so heavily on my Barefoot Contessa cookbooks. Looks like a tasty pizza!
Aw thanks! It was tasty :-) This is just one recipe I came up with on my own…trying to see if I can come up with more complicated things by year’s end but we gotta crawl before we can walk!
Looks delicious!
we also made pizza for lent this year, but using lavash bread! nice idea with the Greek theme!
I’ve gotta try lavash bread! Never had it before!
