Chicken Tinola is on of my favorite comfort foods. It is essentially chicken soup with a gingery taste. Healthy and perfect on a cool day! I can recall having this delicious soup on crisp fall days back when I lived in New York, or even when I was sick. The warm vapors from the chicken broth can soothe any cold along with the sharp ginger taste. I’m glad I was able to recreate one of my favorite comfort foods. I hope you enjoy it as much as I do! Ingredients
2 Tbsp vegetable oil
4 cloves garlic, minced
2 in ginger, peeled & thinly sliced
2 lbs chicken pieces (breast, thighs & drumsticks)
6 cups water
1 Chayote (in the asian vegetable section)
2 Tbsp fish sauce (in the asian food aisle)
1 Tbsp salt
1 1/2 Cup spinach, washed & drained
*Directions
1) Heat the oil in a large pot over high heat.
2) Saute garlic for 1 minute. Then add the ginger & chicken pieces. Saute until the chicken is lightly browned. Then add the water. Bring to a boil over high heat.
3) Reduce heat to medium, simmer the chicken until almost tender, about 20 min. Add chayote & season with fish sauce & salt. Simmer over medium heat. Simmer over medium heat until chicken is fully cooked and chayote is tender, about 10 min.
4) Stir in the spinach and heat through. Serve hot with extra fish sauce if desired.
