Recipe: Beef in Oyster Sauce

When I was younger, on one of my many visits to Los Angeles to see my mom, I asked her to make us a cook book with al of our favorite dishes. Here’s just one of the few recipes she passed down to me.

Ingredients

1 lb flank steak cut across the grain

2 cloves garlic, minced

1 inch slice ginger cut into strips

3 tbsp cooking oil

1 green onion minced

1 tsp sugar

1 tbsp cornstarch

1 tbsp soy sauce

Oyster sauce:

4 tbsp oyster sauce

1 tbsp sherry

1 tsp cornstarch mixed with 2 tsp water

dash pepper

1/2 cup chicken stock

1) Place sliced beef in bowl. Add 1 tbsp of the oil. Add the soy sauce, sugar, and cornstarch. Mix well. LEt stand for 30 minutes. Heat skillet over medium heat and add the rest of the oil. Saute garlic & ginger & set aside.

2) Saute meat pieces in hot oil until brown (about 1 min) Return browned garlic and ginger in pan.

3) Combine oyster sauce ingredients, mix well with beef, turn down heat. Simmer 4 minutes or until beef is tender.

4) Turn off heat. Stir in green onions, serve hot.
